MIT MATEJ FISHER
Oysters are more than just food; they are the purest taste of the sea, shaped by currents, waters and cultivation methods.
In our Oyster Masterclass you will learn how to select, store and open oysters with confidence. You will also discover the differences between Belon, Fin de Claire and Spéciale de Claire oysters, as well as learning about their sizes and regions of production. The class's highlight is a guided tasting of three varieties, first enjoyed in their purest form and then with refined pairings such as the traditional mignonette sauce, caviar, citrus fruits and hot sauces, all perfectly matched with champagne, wine and vodka.
This course is tailored to professional chefs, oyster connoisseurs and those seeking nature's purest flavours. In a relaxed group of six to eight participants, you will expand your knowledge and take home a handcrafted La Furmi oyster knife as a gift. The class is led by oyster expert and enthusiast Matej Fisher, who will guide you through every step. Just as cheese is not simply cheese and wine is not solely red or white, oysters are far more than just oysters. This masterclass combines knowledge, education and enjoyment, offering insights that will transform your relationship with the sea and turn you into a true oyster connoisseur.
Please note: this workshop is held exclusively in English.
