AUSTRIAN POTATO SALAD

Zutaten

900 g waxy potatoes, boiled
400 ml clear beef broth, warmed
1 onion
9 tbsp. oil
4–5 tbsp. cider vinegar
Seasoning salt to taste
freshly ground black pepper
tarragon mustard
sugar

Arbeitsschritte

Peel the boiled potatoes, cut into thin slices, and pour the warm beef broth over them immediately. Finely chop the onion and add to the potatoes along with the oil, vinegar, some seasoning salt and pepper. Add a little bit of mustard and a pinch of sugar. Stir the salad vigorously and thoroughly; this gives it a creamy consistency. Allow the salad to rest for half an hour before serving.
